To keep tabs on every restaurant and bar opening is folly. But to keep tabs on the most worthy? Yeoman’s work, and we’re proud to do it. Thus we present Table Stakes, a monthly rundown of the five (or so) must-know spots that have swung wide their doors in the past thirty.

July was about old dogs learning new tricks.

Established talent striking out for new ‘hoods and boroughs.

Williamsburg received two new outposts from established hitters — one an L.A. seasonal eats fave, the other a downtown NYC sushi crew planting flags in the heart of hipsterdom.

And Billyburg, in turn, sent a favorite son west, to Manhattan, to open an oyster bar on a boat.
