Sushi is the Emily Post of the culinary world.

Everything meted, measured and sliced to a tee. Nary a fish egg out of place.

Flipping a wasabi-drenched bird at all that pomp and order: Sushi Belly Tower, a rowdy pop-up dinner party with live music and an open bar, taking sign-ups now.

Started by a former Olympic runner, SBT’s a major departure from traditional Japanese sushi.

For starters, when you arrive, you’ll notice a massive whole slab of toro on display, rather than pre-cut pieces. Then you’ll hear the band strumming Grant Green-styled jazz on the patio (they always pick a place with a view).

You mingle. You drink.

Then you sit at one of two long tables while the chefs crank out plate after plate of mouth-watering sushi, usually paired with root veggies and fresh herbs.

SBT alerts its followers the week of the event, and doesn’t disclose the exact location until 24 hours beforehand.

And now they’re doing a California Summer Sushi Tour, starting in L.A. and ending in Tahoe.
