For a sandwich to last in the fridge, it has to be built with items that don’t hold much water. Pitchoun’s Atlantic is made with fresh Atlantic salmon, thinly sliced hard-boiled eggs, arugula, radishes and lemon zest on a baguette — all things that’ll keep their integrity throughout the day.

Esters Wine Shop just started serving lunch, and while we’d sit for a hot sandwich and a glass of vino under normal circumstances, we can’t, because we’re too damn busy. The Vedge in the fridge will do the trick. Pickled sunchokes, fennel, carrots, cucs and goat cheese on Milo and Olive whole grain bread: this definitely is not your average veggie sandwich. Plus you just got six servings of veggies in one meal. Feel good about that.
