Knife and Pork

They say you can never have too much of a good thing.

Testing that theory: Heritage BBQ, a swine and dine bacchanal that pits the city’s finest chefs against each other for ultimate bragging rights, coming to Chicago Labor Day weekend, tickets on sale now.

Spun off from the Cochon 555 touring cook-off, Heritage BBQ features an all-star lineup of Chi chefs — Laughing Bird, Mexique, Fat Rice, Big Star and the Radler — serving six-course, nose-to-tail menus of a whole heritage pig provided by a local farmer.

You eat. The judges judge. A king or queen gets the crown.

And if that wasn’t enough, this is all going down at Goose Island’s new Barrel Warehouse. So count on beer. Also a mezcal bar. And a bourbon bar with pours from Buffalo Trace, Four Roses and more.

Also on hand: A pop-up butcher shop with Rob Levitt of Butcher & Larder.

Grab VIP tickets for some early access to the food. Ultra VIP grants you access to an exclusive lounge hosted by Paul Kahan, Matthias Merges and Jason Hammel.

All very good things.
