The drink: The Rawhide.
Ingredients: Rye, leather, smoked tea leaves, dates, coffee, molasses. 
The venue: Plum Bar and Restaurant, in Uptown Oakland.

The drink: Bonnie Lass o’Fyvie. 
Ingredients: Single malt scotch, Pink Lady apple, apple jack brandy, pomegranate, yuzu, and soda. 
The venue: Hopscotch, in Uptown Oakland.

The drink: Beeter & Sweet Negroni. 
Ingredients: Oola barrel-aged gin, anitica formula sweet vermouth, beet-infused juice, angostura bitters and topped with coconut lemon water. 
The venue: Bar Mia, in the Mission.

The drink: The Shining. 
Ingredients: Fords Gin, Aylesbury Duck Vodka, dill-infused Dolin Blanc. 
The venue: Blackbird, in Duboce Triangle.

The drink: The Palm House Pumpkin Fizz. 
Ingredients: Rum, egg white, lemon juice, cinnamon syrup, half and half, and spiced pumpkin purée. (Note: not a latte.) 
The venue: Palm House, in Cow Hollow.

The drink: Divine Swine. 
Ingredients: Whiskey, lemon, house-made bacon-infused bitters, maple pear puree (made by marinating pears for 36 hours in pure maple syrup), and garnished with a strip of crispy bacon and a pear slice. 
The venue: Spoonbar, in Healdsburg.

The drink: Prickly Pear Margarita. 
Ingredients: Casa Pacific reposado tequila, fresh-squeezed lime, agave nectar and prickly pear purée. 
The venue: Pacific Catch, multiple locations.

The drink: Pumpkin Pie Martini. 
Ingredients: Vanilla vodka and pumpkin cream mix. 
The venue: Fog Harbor Fish House, at Pier 39.

The drink: Fall in a Rum Shop. 
Ingredients: Barbadian rum, house-made apple jam, allspice tincture, Amaro Nonino, and small-batch grenadine. 
The venue: Hog & Rocks, in the Mission.

The drink: The Colonial. 
Ingredients: Apple & Pear Mount Gay Rum, housemade apple cider, lemon, ginger beer and Dow’s Tawny Port. 
The venue: PlumpJack Squaw Valley, at Lake Tahoe.

The drink: Spiced Apple Cocktail. 
Ingredients: Fresh ginger, agave nectar, Real McCoy five-year Rum, Sonoma Cider, Ginger Beer, wedge of lime, and apple slice. 
The venue: Left Bank Brasserie in San Jose.
