To keep tabs on every New York restaurant and bar opening is folly. But to keep tabs on the most worthy? Yeoman’s work, and we’re proud to do it. Thus we present Table Stakes, a monthly rundown of the five (or so) must-know spots that have swung wide their doors in the past thirty (or so). Bon appétit.

Your correspondent follows chefs like TMZ follows Amanda Bynes.

They get pageviews, I get fed.

For example, like many of you, I’ve been following Angelo Romano since I first ate at Roberta’s back in Bushwick’s scrappy Bartertown days.

So when I hear that Romano, who also famously did a stint at The Pines, is now dishing out square pies alongside pork ragu in Kips Bay, I go. Even though it’s Kips Bay, I go.

And Romano wasn’t alone this month — a crew of established talent behind some of the city’s most beloved haunts have recently raised the curtain on new culinary ventures.

Inside: a tiny Spanish seafood den beneath the Bourgeois Pig run by vets of Death + Co. and Noma.

And: a power lunch palace of short-rib burgers and martini carts from none other than Charlie Muthaf*ckin Palmer.

Oh, and: you can now get dinner delivered by Daniel and Blue Smoke vets. So there’s that.

So dine on. And drink well.

Enjoy the guide.
