Because every Angeleno loves to eat, even if he has to valet, we bring you Table Stakes: a series that answers man’s eternally recurring question (“Uh, what’s new?”) and recurs once every lunar cycle or so. Bon appétit.

Los Angeles, you may be a sprawling, strip-malled bastion of sunshine, but damn if you haven’t also become the epicenter of a foodie explosion.

An ostentation of restaurants have opened since your correspondent began typing this sentence.

To keep tabs on all of them would be folly.
