You can’t live on grilled chicken breast and steamed veggies forever. OK, technically you can, but that’s no way to live. One way to feel better about indulging in some red meat? Opt for bison over beef — it’s got all your protein and bloody umami goodness with about half the fat.

Here’s how to grill one up right, per FoodRepublic.

Ingredients

  • One 12-oz. Buffalo steak
  • 1 tbsp olive oil
  • Salt and pepper

Steps

Rinse steak and pat dry. Drizzle with olive oil and season generously with salt and pepper. Let rest at room temp for two hours. Then, preheat your grill to 550 degrees, slap that sucker on for three minutes a side, remove, let cool — covered — for about a minute and serve with steamed veggies (we couldn’t let you abandon the plan completely).
